High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In top of reach-in cooler on cook line observed, cut melon (56F - Cold Holding). Employee stated melon had been put in cooler 30 minutes prior to temperature and placed in bottom of cooler. Corrective Action Taken
