Establishment has no approved Alternative Operating Procedure. Observed employee handling tomato mix onto bruschetta with bare hands at front line.

Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed covered antipasta 61F at 5:00. Per manager ambient cooling since 2:30. Antipasta 55F at 5:45. Improper cooling rate. Antipasta was stored in dense covered container. Manager uncovered food item during inspection.

Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade soiled near dish area. Manager began cleaning during inspection. Corrective Action Taken

Intermediate - Handwash sink used for purposes other than handwashing. Observed wiping cloth bucket stored in hand wash sink at front counter/bar area. Bucket removed from hand wash sink during inspection. Corrected On-Site
