Sliced tomatoes in prep cooler 1 top cold holding at temperature above 41F. All TCS (time/temperature control for safety) food items must be cold held at 41F or below. Person in charge discarded sliced tomatoes cold holding above 41F.
6-2 - proper date marking and disposition

Container of sliced tomatoes date marked with prep date 1/4 and container of sliced tomatoes date marked with prep date 1/5 held past 7 days. CA - Ready to eat time/temperature control for safety food must be discarded after 7 days. Person in charge discarded both containers of sliced tomatoes held past 7 days.
