Freshly cut turkey, in the cooling state, was stored in the walk in cooler with a lid. The turkey was partially covered to continue the cooling process. Proper cooling methods must be used to properly cool food to 41F or below.

The walk in freezer was not operational. The person in charge stated that the part had been ordered and the freezer will be repaired as soon as possible.

Several coved molding tiles were missing. The coved molding tiles must be replaced when broken or missing.

The FRP in the establishment is separating from the wall and is not smooth and easily cleanable. The damaged FRP must be repaired and the holes plugged.
