Fish was thawing in the meat sink filled with water. The water must be running in the meat sink when thawing meat. The fish was removed.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Multiple knives were stored between the cutting board and the prep cooler. The knives must be stored in a clean location.
