Observed squeeze bottles of recently prepared ranch dressing cooling by unapproved methods; ranch was in a sears bottle in the prep top cooler at 48F. CA: discussed approved methods of cooling with PIC (use walk-in cooler or freezer, ice bath). PIC moved the ranch bottles to the walk-in cooler to finish cooling.

Observed employees with hair longer than a half inch preparing food while not wearing an approved hair restraint. CA: discussed with PIC. Employees put hats on.

Observed blanched fries held at room temperature on the counter next to the fryers; fries were 45°F-48°F. CA: Instructed PIC that once the fries are blanched or cooked, they must be held under temperature control or time control; the fries cannot be left at room temperature for any length of time.

Current CFSM is the owner and he does not work full time at the store. CA: Instructed PIC to inform the owner that a CFSM must work at least 1 shift each day to be in compliance with code; facility has 60 days to correct.

Observed wet, dirty wiping cloths stored in front hand washing sinks and a trash can stored in front of the back hand washing sink. CA: Instructed PIC that hand washing sinks must always be clean and accessible for hand washing.

Observed wet, dirty wiping cloths stored on surfaces throughout the kitchen, including on the sanitized side of the 3 compartment sink. CA: Instructed PIC that dirty cloths must be moved to the dirty linen storage area and wet, in-use wiping cloths must be kept in a container of sanitizer water.
