Observed soda nozzle in dining room heavily soiled with black build up. CA: Food contact surfaces shall be clean to sight and touch.

11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed items prepped 30 minutes prior to inspection placed in RIC cooling in tightly lidded containers. CA: TCS foods being cooled shall be loosely covered or uncovered to allow rapid cooling to take place. Proper equipment shall be used for cooling food (ice bath, freezer, WIC). COS: Hero sauce and tuna salad were placed in reach in freezer to rapidly cool.
