Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed container is sliced mushrooms bearing no date mark. CA: TCS food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be discarded. COS: Mushrooms were discarded.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(i) - storage or display of food in contact with water or ice (c)
Observed boiled eggs being held in container of water in prep top cooler. CA: Food may not be stored in direct contact with water or ice. COS: Eggs were discarded.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee personal items stored walk in cooler in contact with facility foods. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC had personal items removed from walk in.
