Other items had been held for less than 4 hours and were moved to walk-in cooler and walk-in freezer to rapidly cool. Discussed cold holding with PIC. Recommended keeping lids of prep top coolers closed when not in use. Store minimum amounts of food in reach in cooler by pizza oven area, and store food on left side (farther away from pizza oven) if possible.
