6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed potentially hazardous TCS foods (cupped ranch 54F, cut lettuce 54F, guthrie's sauce 48F) improperly cold holding above 41F in ice baths. CA: Cold held TCS foods shall maintain an internal temperature of at least 41F or below. COS: All foods were out of temp for less than 4 hours. Employee relocated cupped ranch to the walk-in cooler to rapidly cool. PIC chose to discard lettuce and guthrie's sauce. Discussed proper set up and maintenance of ice baths and proper procedure if switching to Time as a Public Health Control.
