6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed improper cold holding of potentially hazardous TCS foods above 41F. In the reach-in cooler horchata was 55F, stored ambient on the counter top was mayo 70F, dulce de leche 72F (manufacturer's packaging on each stated "refrigerate after opening"). CA: Cold held TCS foods shall maintain an internal temperature of 41F or below. COS: Horchata and mayo were out of temperature for less than 4 hours and were moved to the reach-in freezer to rapidly cool. Dulce de leche was discarded.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed utensils stored in bulk container of sugar with handle in contact with the sugar. CA: Utensils stored within containers of food in between uses shall be stored so the handle is above the food. COS: Scoop was moved.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed boxes of single use items stored on the floor in the dry storage room. CA: Equipment, utensils and linens shall be stored 6" off the floor in a clean, dry location.
