Observed wings after moved to freezer to rapidly cool with lids on containers. CA: Proper cooling methods include equipment and active monitoring of cooling process. COS: After discussion with PIC, chicken wings were done cooking at and hour prior to inspection and were cooling in oven. Wings were temping at 90 degrees F an hour and a half after initial cook. Wings were moved to walk in freezer to rapidly cool to 70 degrees F or below to hit critical control points. Lids were removed to rapidly cool.
