Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed raw chicken cold holding above 41F (44F, 55F, 62F) at the prep sink. Per PIC, chicken had just finished thawing under running water. CA: Cold held TCS foods shall maintain an internal temperature of at least 41F or below. COS: Chicken was out of temp for less than 4 hours and moved to the walk-in cooler to rapidly cool.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed soda nozzles at both drink stations and the interior lid of one of the ice bins with black build up on the food contact surface portions. CA: Food contact surfaces shall be clean to sight and touch. COS: Nozzles were pulled and re-washed. Ice bin will be drained and deep cleaned. Discussed more frequent routine cleaning moving forward.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed stainless steel cleaner stored directly on top of boxes of shortening. CA: Toxic materials shall be stored separately so they cannot contaminate food, equipment, utensils, linens or single-use articles. COS: PIC relocated the cleaner.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoop stored in hashbrowns with handle laying in the food. Observed employee use cup with no handle to scoop ice out of the bulk bun. CA: Utensils stored within containers of food between uses shall have the handle stored above the food. COS: PIC adjusted hashbrown scoop. Discussed using the designated ice scoop with a handle and no the drinking cups for ice.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed leak in walk-in cooler. CA: Equipment shall be maintained in good repair. COS: No COS can be noted, health dept will follow up. Discussed repairs with PIC. In the meantime, ensure that no food is stored beneath the leaking portion of the cooler.
