6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed potentially hazardous TCS foods improperly cold holding above 41F in the walk-in cooler (mac n cheese 51F, bacon 49F). CA: Cold held TCS foods shall maintain an internal temperature of at least 41F or below. COS: Foods were out of temp for less than 4 hours and were able to rapidly cool in the walk-in cooler.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed significant build up of grease/debris/food accumulations on the exterior of bulk storage containers and the sides of equipment. CA: Nonfood-contact surfaces of equipment and utensils shall be kept free of any accumulation of dust, dirt, residue and other debris.
