Observed raw bacon and sausage stored on top of ready to eat foods in the reach in cooler in the main kitchen. Food shall be stored according to cook temp to prevent contamination. COS, PIC stored food properly to prevent contamination.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed large amount of mold in the ice machine in the main kitchen. Food contact surfaces shall be clean to sight and touch. COS, PIC cleaned the ice machine.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed several containers of chemicalsnot stored to prevent contamination of food items/single service items in the storage closet. COS, PIC stored chemicals to prevent contamination.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed bag of rice and boxes of sweet potatoes stored on the floor in the storage area. Food items shall be stored at least 6" off the ground to prevent contamination. COS, PIC stored food to prevent contamination.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed large mouse hole with droppings and evidence of rodent activities in the dry storage area. PIC stated that they have been having rodent issues. Facility shall be maintained free of pests. CTM, facility shall send records of pest control for mice to austin.haney@dph.ga.gov immediately to ensure that the issue is resolved.
