15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed facility's need to clean all food storage racks in the walk cooler(build-up of residue), dough storage pans stored as clean(grease and debri accumulation), and dust accumulation on hood panels above the pizza oven. (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. EHS informed the PIC of the need to clean all equipment routinely and thoroghly.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed facility's need to clean under and around bulk equipment (accumulation of residue and debri). al facilities shall be maintained in good repair.
(b) Cleaning, Frequency and Restrictions.

The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing. EHS informed the PIC of the need to routinely clean the facility.

Observed damaged tile coving in various areas of the facility and heavily stained ceiling along the prep/cook line. (5) Maintenance and Operation.
(a) Good Repair. All physical facilities shall be maintained in good repair. EHS informed the PIC of the need to repair/replace tiles in the noted areas.
