Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations.

Violation: Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. P Inspector note: EHS observed two bags of expired onions (1/31/24) in WIF and an expired half carton of milk (1/31/24) in reach-in unit. Corrective action: EHS instructed PIC to ensure perishable items and food items with pre-packaged expiration dates are used/discarded by date provided.

Violation: 2. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored: (i) In a self-draining position that allows air drying; and (ii) Covered or inverted. Inspection: EHS observed plates stored above the grill prep area without inverting or covering to prevent debris. Corrective action: EHS instructed PIC to have the plates covered/inverted while in storage.

Violation: 1. Except as specified in paragraphs 2 through 5 of this subsection, outer openings of a food service establishment shall be protected against the entry of insects and rodents Inspector note: EHS observed pests gaining access into facility through opening at the bottom of back door. Corrective action: PIC informed maintenance of the need for weatherstrip. Maintenance will have weatherstrip installed 7/21/23

Preset tableware may be exposed if: (i) Unused settings are removed when a consumer is seated; or (ii) Settings not removed when a consumer is seated are cleaned and sanitized before further use. Inspector note: EHS observed top plated exposed to potential contamination. Corrective action: EHS instructed PIC to have top plates covered or inverted to prevent potential contamination.
