EHS observed grease build up behind cooking equipment under hood vent . 511-6-1.05(7)(d) - Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Violation: Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperatures as specified under DPH Rule 511-6-1-.04. Pf Inspector note: EHS observed reach-in cooler at prep station holding at 44F. Cooler had been cleaned to transition for lunch at 10:05. PIC left cooler to get back down to 41F. When EHS temped unit at 10:14 and 10:57, the temperature remained at 44F. No TCS food items where in cooler at the time. Corrective action: PIC is to ensure the top portion of the cooler remains 41F and below or use alternative cold holding options discussed. PIC is to have maintenance resolve issue prior to using cooler.
