6-1C - proper cooling time and temperature
Regulation: 511-6-1.04(6)(d) - cooling (p)
EHS observed sliced tomatoes in prep top cooler sitting on top of metal pan lid not below gridwork. Tomatoes temperature at 10:35am were 47F and still 47F at 10:50am. Violation: TCS food shall be cooled to 41F or below in four hours when prepared from ambient temperature. CA: EHS had PIC place sliced tomatoes into prep top cooler correctly to allow for cooling to occur.
