6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple items of food cold holding at 45 and above in the prep top cooler to the back left of the kitchen. CA: Time/temperature control for safety food shall be maintained at 41 degrees Fahrenheit or below. COS: Items that had been moved up from the walk in cooler this morning were identified and placed back in the walk in (WIC was at 41F or below) while the rest of the items had been in there overnight. Those identifed as such were voluntarily discarded. "Do Not Use" sign on the prep top cooler till it is fixed.
