Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed Salsa stored on counter top using ice at 51F. COS item was disposed of. Spoke with manager on how to properly cold food items using ice. Manager is going to switch to a shallower container so that ice covers the full container.
