Person in charge and area manager were unaware of any employee health policy beyond that sick employees shouldn't work. No employee agreements of reportable illnesses were available. CA: Further information will be emailed to PIC. Review page 38 of current rule.
4-2B - food-contact surfaces: cleaned & sanitized

Observed can opener blade with food build-up on it. Observed sweet tea nozzle with build-up on it. CA: Clean and sanitize before further use and increase cleaning frequency.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizer dispenser for 3 compartment sink and buckets producing 0 ppm Quat. COS: Empty sanitizer bottle was replaced, sanitizer concentration became too high, and water was added to dilute the solution to approximately 200 ppm.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(k),(l) - storing refuse, recyclables & receptacles; areas, enclosures, & receptacles, good repair (c)
Observed multiple card board boxes on floor in dry storage room and warewashing room throughout duration of inspection. CA: Place refuse and recylables in appropriate locations.
