EHS asked PIC about the sauce and PIC stated that the pan was pulled from the WIC and placed in the steam well/bath to be hot-held. COS: PIC removed the marinara sauce from the steam well and placed in a pot on the stove to reheat. Marinara sauce was temped after reheating on the stove and was observed to be at 177 degrees F. TCS foods that are reheated for hot-holding must be reheated to at least 165 degrees F, before being hot-held at 135 degrees F or above.
