Observed TCS foods out of temperature including; Grilled chicken 51F, 61F; whole beef 50F, shredded roast beef 75F; shredded chicken 75F. PIC discarded all items
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed old labels on clean pans./remove old labels entirely when wash rinse and sanitizing.
