observed 53F sliced tomatoes and 52F cheese on shallow ice. CA: Ensure 41F or below or use TPHC. Ice should be as high up as product level. Cos: pulled and labeled for discard.

Observed lactic acid test strips only for sanitizer - observed ammonia chloride used as sanitizer - provide test strips for ammonium chloride.
