PIC told inspector that the facility washes dishes in the following way: sanitize, then rinse, then wash. PIC said that's the way that she was always told to do it. CA: Inspector told PIC to immediately start using the correct wash method of WASH-RINSE-SANITIZE and explained why that is the proper method.

Inspector observed multiple mold spots growing around one of the air vents of the A/C system and ceiling tiles/wall surrounding it. CA: PIC told to have this serviced by HVAC repair as there might be something wrong with the air handler. Also told to clean the mold to prevent it spreading over to areas above food.

Some of the shelves also having a dripping substance on them that is dripping onto pans below. CA: Told PIC to clean the shelves, PIC stated that it builds up quickly. Inspector pointed out that this build up has been there a while and there was a long piece of hair caught up in the dripping substance.
