Hand wash sink did not have a supply of soap nor paper towels. COS: PIC had hand soap and paper towels resupplied.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(d),(e) - grease trap; conveying sewage (c, p)
No grease trap for facility. No mop sink.
CA: Must install a 125-gallon grease trap to intercept kitchen wastewater before flowing into septic tank. Must install a mop sink.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(b) - outdoor storage surface, constructed of nonabsorbent material & sloped to drain (c)
Outdoor refuse storage is on dirt. CA: Must install a concrete pad or asphalt to place refuse containers on.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed food residue/grease build-up in/on cooking surfaces (fryers, hood exhaust, stove, etc.). CA: Clean at a frequency to prevent the accumulation of build-up on surfaces, clean up food residue.
