6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed coleslaw and macaroni and cheese cold holding in the refrigerator above 41 F. Owner states the greens are warming the fridge. (COS- PIC placed food items in the freezer.) Ensure all cold-holding TCS food items are at 41 F or below at all times.
6-1B - proper hot holding temperatures

Observed pork shoulder hot holding in the warmer at 109 F. Owner states that the meat was placed in the warmer at 10:30 and will be placed in the freezer immediately after the lunch rush. Ensure all hot TCS food items are hot holding at 135 F or above at all times.
