Observed facility to have raw bacon in the reach in cooler. Category one facilities are only allowed to serve pre-cooked foods. PIC is responsible for complying with the rules and regulations applicable for a Category 1 facility. RCA: Discard/remove raw foods from the facility and only serve pre cooked items as is allowed with a Category 1 food service permit.
15C - nonfood-contact surfaces clean

Observed both waffle makers to have a build up of food debris in the portion of the equipment that the waffles are in contact with. Observed food debris in the basin of the hot holding pans.
Rule: The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations.
Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
