4-1A - food separated and protected
Regulation: 511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - packaged & unpackaged food separation, packaging, and segregation (p, c)
Observed raw chicken stored on top of butter in walk-in cooler. Observed raw fish stored next to raw chicken in reach-in cooler.
COS CA: PIC rearranged items to prevent cross-contamination.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed mechanical dishwasher not pulling adequate levels of chemical sanitizer (chlorine).
COS CA: PIC changed out empty sanitizer container. Chemical sanitizers shall be kept in stock and checked daily for correct concentration for proper sanitization.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed build-up on baffle of ice maker machine.
RCA: Facility shall increase cleaning of ice machine. Burn ice, clean and sanitize interior before refilling ice. Equipment, food-contact surfaces and utensils shall be clean to sight and touch.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed multiple TCS foods on the floor in the freezer (chicken, stock, pork hocks).
CA: PIC was unable to move all food items off the floor as multiple boxes were stored on top of them. food shall be protected from contamination by storing the food(i) In a clean, dry location;(ii) Where it is not exposed to splash, dust, or other contamination; and(iii) At least 6 inches (15 cm) above the floor.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Facility was using steramine (quat) tablets for sani-buckets but had no chemical testing methods.
RCA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed multiple employee items including medicine, drinks, and food stored next to facility menu food items.
RCA: Facility need to have a designated Areas for Employee Activity and storage, this area needs to be located to prevent contamination of food, equipment, utensils, linens, & single service articles
