6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS food items cold-holding above 41F on top of prep-top unit (see temperature log). Observed ambient temperature of 49F. COS: PIC stated all TCS items placed in unit less than 4 hours prior. Items were placed on ice to rapidly cool.
