Observed multiple knives on magnetic knife rack not in use to have food debris build up on it. Observed vegetable peeler with food debris. Observed Scissors with food debris build-up.
COS CA: PIC placed all utensils in 3-compartment sink to be washed. RCA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.

Observed nonfood-grade containers used for food storage.
RCA: All food items shall be stored in NSF approved food grade containers.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed reduced oxygen packaged tuna fully thawed in its package, where the label states to "remove from package before thawing."
COS CA: PIC discarded all ROP fish that was thawed in the packaging. RCA: Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment Prior to its thawing under refrigeration. Or prior to, or immediately upon completion of its thawing, using procedures to completely submerge in running water.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed rolls of paper towels and toilet paper stored on racks unprotected from outside contamination.
RCA: Single-service and single-use articles shall be stored shall be kept in the original protective package or stored by using other means that afford protection from contamination until used.
