Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed walk in cooler to be at 45F, chicken, and beef temping at above 41F,.
RCA: PIC Discarded all items that that were above 41F. Told PIC to have call maintenance to repair walk-in. Put items in reach in cooler until walk in is repaired.
