Observed food debris on the meat slicer. Observed mold like substance in ice maker. Observed food debris on multiple pieces of clean dishware. Observed old labels/stickers and glue residue on cleaned dishware.

RCA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.

Observed mold like substances on all storage racks within the facility including in the walk-in cooler. Observed buildup of dust and debris on non-food contact equipment including wires and computer screens. Observed grease and dust build up on the ansul system.

RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed some food build-up under pans in the reach in coolers.

RCA: Told PIC to ensure that all reach in coolers do not have any old food build-up under the pans. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations.

Observed food debris and grease in the main hand sink. CA: PIC will clean out hand sink and will ensure all hand sinks are used for handwashing only. 511-6-1.06(2)(o) - Using a Handwashing Sink- Operation & maintenance (Pf) (o) Using a Handwashing Sink.

Observed multiple foods in front reach in cooler stored without lids (chicken, ribs). Also observed food in bulk storage without lids or coverings (flour, sugar, corn meal). CA/COS: PIC provided lids and coverings for food items, and will ensure employees cover all food items when not in active use.

Observed wet nesting of metal and plastic pans on clean dish rack. CA: PIC unstacked dishes and will rewash items that were not dried.
