Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed food debris on the meat slicer. Observed mold like substance in ice maker. Observed food debris on multiple pieces of clean dishware. Observed old labels/stickers and glue residue on cleaned dishware.
RCA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed mold like substances on all storage racks within the facility including in the walk-in cooler. Observed buildup of dust and debris on non-food contact equipment including wires and computer screens. Observed grease and dust build up on the ansul system.
RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
