6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple RTE foods (short ribs, pork belly, collard greens etc) to be cold holding above 41F inside of walk in cooler (see temperature log). Observed all food items to have been prepared between 6/2/2026 through 6/7/2026.
CA/COS: PIC discarded all food items.
