Observed wings cooling in a large container in walk-in cooler. Wings were unable to cool at an adequate rate. CA: PIC reheated the wings because they were still within temperature and time. PIC shall cool wings on racks until cool enough to place in cooler.

Observed scoops stored in bulk flour, bread crumbs, etc. with handle contacting food product. CA: PIC rearranged scoops to prevent handle from touching food.
