Observed wings cooling in a large container in walk-in cooler. Wings were unable to cool at an adequate rate. CA: PIC reheated the wings because they were still within temperature and time. PIC shall cool wings on racks until cool enough to place in cooler.

Observed scoops stored in bulk flour, bread crumbs, etc. with handle contacting food product. CA: PIC rearranged scoops to prevent handle from touching food.

Observed sides of equipment, bottoms of storage racks and various portions of equipment to have debris and old food residue. RCA: All non-food contact surfaces shall be clean to sight and touch.

Observed build-up and debris on the walls throughout the facility. RCA: All floors, walls and ceilings shall be cleaned to sight and touch and in good repair.

Observed light bulb burned out in ventilation hood. RCA: All lights shall be working in a vent hood to provide adequate light intensity.

Observed server utilize cups to scoop ice instead of ice scoop. CA: Employee was educated on proper ice scooping protocols.

Wiping cloths observed being used as shelf liner in beer cooler behind bar. RCA: Wiping cloths shall only be used for wiping and no other task.

Observed bowl used as a scoop being stored in bulk flour container. Observed scoop stored in bulk bread crumbs with handle contacting food product. CA: PIC removed bowl and rearranged scoop to prevent handle from touching food.

Observed insulation on soda concentrate boxes in room behind bar. Observed hole in the ceiling that insulation had fallen from. RCA:

Observed unsealed ceiling in room with ice machine, soda carbonate machine and mop sink. Ceiling shall be smooth, non-absorbent and easily cleanable. RCA: Seal ceiling with non-water based sealant. 511-6-1.07(2)(a) - Floor, Walls, & Ceilings, Cleanability (C) (2) Design, Construction, and Installation.

(a) Floors, Walls, and Ceilings, Cleanability. Except as specified under subsection (2)(d) of this Rule and except for anti-slip floor coverings or applications that may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.

Observed mop stored with mop head on floor when not in active use. CA: PIC removed mop head and discarded in linen bucket to be washed.

Observed employee speaker stored next to clean containers in main kitchen. CA: PIC relocated speaker to an area where it was not in contact with food-contact surfaces.

Observed wiping cloths used as liners for breading area. RCA: Recommend removing or with replacing with cleanable mats or commercial grade liner. 511-6-1.04(4)(m) - Wiping Cloths, Use Limitation (C) (m) Wiping Cloths, Use Limitation.

1. Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be:

(i) Maintained dry; and

(ii) Used for no other purpose.

Observed mops stored with mop head on floor when not in active use. RCA: 511-6-1.07(5)(f) - Drying Mops (C) (f) Drying Mops. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
