Observed front hand sink to be without hand soap or paper towels at beginning of inspection. Observed back hand sink with watered drown hand soap and paper towels stored next to clean plates. CA: PIC replaced hand soap at each sink. PIC moved paper towels to front hand sink to accessible location rather than below computer. PIC replaced batteries in paper towel dispenser in back kitchen to move paper towels to a location that does not contaminate clean dishes.
12C - wiping cloths: properly used and stored

Observed wiping cloths stored beneath egg scramble bowl on front cook line. Observed wiping cloth stored beneath clean cups near server's station. RCA: Wiping cloths shall only be used for wiping, not as shelf liners.

Observed two compartment sink to not be properly protected from backflow due to a direct connection to drain to sewer. RCA: Prep sinks shall be protected from backflow from sewer by having a direct connection below the basins.

Observed cups in server's station to be stacked while wet. RCA: All food-contact surfaces shall be fully air-dried prior to stacking. Facility shall install additional drying rack to allow cups to fully dry prior to use. The installation of a cup rack drying area may be more beneficial.
