Observed mold like substance build up on turkey wings and turkey drumsticks within the walk in cooler. CA: PIC discarded food in dumpster.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed black build up on baffle of ice machine within bar area. CA: PIC shall burn ice and clean. RCA: All food-contact surfaces shall be clean to sight and touch.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed build-up on front of reach in cooler in the main kitchen. Observed grease build-up on the outside of the fryer. Observed build-up of debris on fan in walk in cooler. CA: All food and non-food contact surfaces shall be fully cleaned. RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris

Observed build-up on floor beneath kitchen equipment. Observed build-up on floor beneath 3-compartment sink. Observed build-up of debris on back wall in main kitchen by the handwashing sink. CA: PIC shall deep clean facility. RCA: he physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products
