6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed pizza prep cooler not capable of maintaining temperatures of 41F or below. All food product that had been stored in unit longer than one hour held temperatures of 46F-52F. Products included: mozzarella cheese, marinara, sausage, beef, chicken, pepperoni and alfredo sauce. CA: All items were placed from walk-in cooler to prep top cooler at 11:00am. All items shall be discarded at 5:00pm if not sold. PIC shall contact maintenance to service the unit. PIC shall contact the Chatham County Health Department at (912) 356-2160 when unit is repaired to verify the functionality of the unit.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed build-up on walls above POS system. Observed build-up on walls around hand sinks. Observed build-up on back wall of equipment storage. RCA: All floors, walls and ceilings shall remain clean to sight and touch.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.05(2)(n) - exhaust ventilation hood systems, designed to prevent grease or condensation from dripping on food/equipment (c)
Observed all filters missing out of pizza oven ventilation hood. RCA: Ventilation hoods shall remain in good repair and designed to successfully prevent grease of condensation build-up.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee drinks stored above and next to facility food in walk-in cooler. CA: PIC moved drinks to bottoms shelf within employee food/drink storage container.
