Observed employee with beard at grill prep without proper beard restraint. COS: Employee put on beard guard. CA:Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.

Observed TCS items (lamb) at grill prep rotating heat lamps not being hot held correctly at 135 degrees F or above. COS: PIC turned up unit and temperatures rapidly increased to above 165 degrees F. CA: All TCS food items shall be hot held at 135 degrees F or above.
