2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Upon arrival, observed hand sink obstructed by multiple tablecloths and wiping rags. A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: Had PIC remove tablecloths and wiping rags from hand sink.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Upon arrival, observed soap not supplied at the hand sink. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Stated to PIC to supply the designated hand sink with soap.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed food contact surfaces of interior panel of ice machine stored as clean and stored with ice inside with severe brown/black residue. Equipment food-contact surfaces and utensils shall be cleaned at any time during the operation when contamination may have occurred. Stated to PIC to increase the cleaning frequency of food contact surfaces of the interior of the ice machine.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed multiple boxes of food products stored on the floor in the walk-in cooler and walk-in freezer. Food shall be protected from contamination by storing the food in a clean, dry location where it is not exposed to splash, dust, or other contamination, and at least 6 inches (15 cm) above the floor. COS: PIC placed boxes on shelving rack in the walk-in cooler and walk-in freezer.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed active leaks at the faucet of the 3-compartment sink and meat sink during time of inspection. A plumbing system shall be repaired according to law maintained in good repair. Stated to have the 3-compartment sink and meat prep sink repaired.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(1)(a) - indoor materials (c)
Observed ceiling tiles in the men's and women's restroom to be absorbent. Materials for indoor floor, wall, and ceiling surfaces under conditions of normal use shall be nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, ware-washing areas, toilet rooms, mobile food service unit servicing areas, and areas subject to flushing or spray cleaning methods. Discussed with PIC to replace absorbent ceiling with nonabsorbent ceiling tiles.
