Observed designated handwash sink not supplied with paper towels at the near the warewash area. Advised PIC each handwashing sink or group of adjacent handwashing sinks shall be provided with individual, disposable towels. Advised PIC to place paper towels at the designated handwash sink near the warewash area.

Observed food contact surface of ice machine interior panel stored as clean with pink mold-like substance. Advised PIC equipment food-contact surfaces and utensils shall be cleaned at any time during the operation when contamination may have occurred. CA: Advised PIC to increase the cleaning frequency of the ice machine interior panel.

Observed multiple containers of prepped salad improperly cooling in the walk-in cooler tightly covered. Advised PIC on proper cooling methods. COS: PIC had food employee remove lids from multiple containers of salad.

Observed multiple sanitizer buckets storing wiping cloths with a sanitization concentration above and below the adequate range. Advised PIC Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n) (between 200-400 ppm quat). CA: Advised PIC to dilute and increase all sanitizer buckets to the appropriate range of 200-400 ppm quat.
