6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed ceviche stored in main kitchen reach in cooler measuring above 41 degrees F. COS: PIC discarded. Also observed containers of dairy in prep sink in ice bath with ice melted measuring above 41 degrees F. COS: PIC added fresh ice and temps fell. CA: All TCS food items shall be cold held at 41 degrees F or below.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed hot water not working in men's and women's restrooms. Hot water was turned off. COS: PIC turned on hot water in men's and women's restrooms. CA: All hand wash sinks shall be supplied with hot water minimum 85 degrees F.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee drink and employee hat stored with facility items in dry storage. Also observed employee jacket and aprons stored hanging on shelves next to single use articles in dry storage. COS: PIC moved items to designated area. CA: Use designated areas to store employe personal items to protect against cross contamination.
