6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS food items cold holding in the temperature danger zone above 41 degrees F in the main kitchen's WIC. Advised PIC that when cold holding raw and ready-to eat TCS foods, foods shall cold hold at 41 degrees F. or below. COS: PIC discarded all TCS items.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Upon arrival, observed screen door and back door propped open. Advised PIC that outer openings shall be protected against rodents and posts by sloid, slef-closing, and tight-fitting doors. COS: PIC closed the screen door in oder to eliminate visible light entry.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed the WIC with an ambient temperature of 44.6 degrees F. Advised PIC equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2) of this Rile. Advised PIC to have unit serviced.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed nonfood contact surfaces of exterior of pan stored as clean on shelving rack near the 3-comparment sink with severe food debris. Advised PIC that nonfood contact surfaces of equipment shall be kept free of accumulation, dust, dirt, food residue, and other debris. Advised PIC to clean exterior of pan.
