Observed in RIC 1, raw chicken wings, raw pork chop and raw chicken tenderloin cooling tightly covered. Also observed in RIC 2 multiple containers on black eyed peas and cooked rights cooling tightly covered. Advised PIC on proper cooling methods: under refrigeration uncovered or loosely covered. COS: PIC uncovered all items for proper cooling.

Observed 2025 permit posted in public view. Advised PIC a current Food Service Establishment permit shall be posted in public view. Advised PIC to obtain the 2026 Food Service permit and post in public view.

Observed exterior of fryer baskets, nonfood contact surfaces, stored as clean with excessive debris. Also observed nonfood contact surfaces of the in interior of PTC and RIC 1 in need of cleaning due to excessive food debris and residue. Advised PIC that nonfood contact surfaces shall be cleaned and free from residue, debris, and dust. Advised PIC to thoroughly clean all nonfood contact surfaces.
