6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed multiple TCS food items hot holding in the temperature danger zone below 135F at the front-food service steam table. Advised PIC that when hot holding raw and ready to eat TCS foods, foods shall be at a temperature of 135 degrees F or above. COS: PIC began reheating items to 165F.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed PIC rinse probed thermometer at the front food service hand sink. Advised PIC that a handwashing facility may not be used for purposes other than handwashing. COS: Had PIC cease rinsing probed thermometer at the front food service hand sink.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed visible light entry at back screen door with the main back door open. Advised PIC that outer openings shall be protected from pest and rodents by solid, self-closing, tight-fitting doors. Advised PIC to have screen door repaired and to close the back door of the facility.

Upon arrival, observed the most recent inspection report not posted in public view. Advised PIC that the most recent inspection report shall be posted in public view at all times. Advised PIC to obtain the most recent inspection report and post in public view.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed WIC with an ambient temperature of 48 degrees F. Advised PIC equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2) of this Rule. Advised PIC to have unit serviced.
