Observed facility without a food allergy awareness training during time of inspection. Advised PIC that the facility shall have a training regarding food allergy awareness. Advised PIC to obtain/create food allergy awareness training and provide to the Health Authority upon request.
2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
Observed/PIC could not demonstrate in a verifiable manner that food employees are/were aware of their responsibilities to report foodborne diseases and symptoms. Advised PIC that an employee health policy shall be provided to the Health Authority upon request. Advised PIC to obtain employee health policy and provide to the Health Authority upon request.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed nonfood contact surfaces of RIC #3 and RICE #5 with excessive food debris. Advised PIC that all nonfood contact surfaces shall be cleaned. Advised PIC to thoroughly clean all nonfood contact surfaces.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed personal cell phone on prep table in the main kitchen. Also observed personal drink on table storing clean blenders at the front-service area. Advised PIC all personal belongings shall be placed in a designated area. Advised PIC to place all personal belongings at the designated area.
