6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several TCS food not using proper date marking system. Advised to discuss date marking with staff to keep track of the 7 days. Advised to indicate date cooked, frozen, removed from freezer on packages of food or reheat from frozen state.
