Observed PIC grab a box of gloves off of the floor and proceeded to handle donuts. Advised PIC on when to wash. COS: PIC removed gloves and proceeded to wash hands at the designated handwash sink.

Observed TCS food item (raw shell eggs) at grill prep station missing time stamp for discard time. Advised PIC food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. COS: PIC place time stamps on raw shell eggs next to grill prep station.

Observed, upon arrival, chair storing multiple items obstructing front handwash sink. Advised PIC that all handwash sinks shall be maintained so that it is easily accessible at all times. COS: PIC removed chair obstructing front handwash sink.

Observed food contact surfaces of 2 microwaves and 1 convection oven stored as clean with old food debris and residue. Advised PIC equipment food-contact surfaces and utensils shall be cleaned any time during the operation when contamination may have occurred. Advised PIC to increase cleaning frequency of microwaves and convection area.

Observed employee crack an egg on the grill and then place a croissant on the grill without washing their hands or change gloves. Advised PIC, that employee shall wash their hands when changing tasks.

Observed raw eggs in reach in cooler stored with fully cooked bacon. Also, observed raw bacon stored with fully cooked chicken sausage. Advised PIC to separate raw animal products from cooked foods and store foods based on their final cooking temperature.

Observed chicken sausage, pork sausage, cheese, diced potatoes in the reach in cooler cold holding above 41 degrees. Advised PIC that all TCS foods shall be held at a cold hold temperature of 41 degrees or below. Also, advised PIC to discard items.

Observed several foods (cooked chicken sausage, cooked pork sausage, white american cheese and diced potatoes) stored in the small reach in cooler in the main kitchen stored uncovered, Advised PIC that all foods in a container needs to be covered at all times.

Observed chicken sausage, pork sausage, cheese, diced bacon without the proper labels on the outside of the containers. Advised PIC to remove old labels and place the correct labels on the containers.
