Observed multiple food employees eating in the main kitchen near the prep top cooler. Advised PIC employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS: Had food employee cease eating at food preparation area.

Observed multiple bulk containers of seasonings/spices in the main kitchen unlabeled with its contents. Also observed multiple sauce bottles at the cookline unlabeled with its contents. Advised PIC that all containers and sauce bottles shall be labeled with its contents in English. Advised PIC to label all sauce bottles and bulk containers of seasonings/spices.
11A - proper cooling methods used: adequate equipment for temperature control

Observed multiple chicken wings at the fryer basket cooling at room temperature. Advised PIC on proper cooling methods: When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be uncovered or loosely covered. COS: PIC placed all chicken wings in the WIC to properly cool.
