Observed raw shell eggs stored behind cooked beef and cooked chicken at prep-top cooler (vertical hierarchy). Advised PIC arranging each type of food in equipment so that cross contamination of one type with another is prevented.

Observed no evidence of food allergy awareness training upon request documentation nor proof of verbal training, failure to answer food allergy awareness questions. Advised PIC employees are properly trained in food safety, including food allergy awareness, as it relates to their assigned duties. Food allergy awareness includes describing foods identified as major food allergens and the symptoms that a major food allergen could cause in a sensitive individual who has an allergic reaction
15C - nonfood-contact surfaces clean

Observed debris and accumulation on exterior non-food contact surface of multiple bins at dry storage area. Advised PIC nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
